Alu Saag (Potato Spinach)

Ingredients

1 cup spinach chopped or 2 cubes frozen spinach
2 large potatoes boiled
1 onion chopped
1 t. ginger paste
1 t. garlic paste
1 t. coriander powder
1 t. cumin powder
1 t. chili powder
Salt to taste
2 T. oil


Instructions

Take a pan and heat the oil fry the chopped onion till golden brown and add the ginger and garlic pastes. Fry for 3 minutes. Now add the spinach and cook it for 5 minutes. Now add the potatoes and the rest of the ingredients and cook for 10 minutes on medium low heat till the potatoes have browned to a golden brown. Stir carefully or the potatoes will get mashed. Take off heat and serve with Naan or rice.
